Five on-the-go Breakfast Recipes
Whip up one of these delicious breakfast recipes perfect for busy mornings.
Busy and hectic schedules don’t allow for a carefully made multi-course morning meal. The night before your busy week, bake one of these on-the-go recipes, store in the fridge and heat them up in the morning before leaving the house.
Omelet Muffins
Omelets are yummy but take prep work and time. This recipe makes omelet eating easy and includes all the ingredients you would normally add to your omelet. You’ll want to be sure to include the eggs, but the other ingredients are really up to you. This is this recipe we chose.
Ingredients:
6 eggs Shredded cheese
Bacon bits
Spinach
Tomatoes
Salt and pepper
Directions:
Preheat the oven to 350 degrees and grease the muffin tin before filling the baking cups one-third full of your chosen ingredients. Beat the eggs and pour them into each cup. Leave a bit of room for the muffins to puff up, and slightly stir each cup to mix the ingredients. Bake for 18 to 20 minutes and refrigerate in a sealed container.
Homemade Egg Muffins
Not only are these delicious, but they’re fairly healthy too. Unlike the famous breakfast sandwich at McDonald’s, you know exactly what’s going into this meal. They do take a few extra minutes to prepare, compared to the muffins, but they’re so delicious, it’s worth it!
Ingredients:
1 package whole-wheat English muffins
6 eggs Sliced cheese
Pre-cooked sausage patties (turkey or pork)
Directions:
Preheat the oven to 350 degrees. Grease a muffin tin and crack an egg into each individual cup, and season with salt and pepper as desired. Bake for 10 to 15 minutes. Refrigerate in a sealed container or plastic bags. In the morning, toast the muffin and heat the egg and sausage.
Sausage Muffins
These sausage muffins are filling, mouthwatering and fun to prepare. This recipe tastes as though you combined and mashed up sausage biscuits before fashioning them into muffins.
Ingredients:
1 cup Bisquick or other pre-mixed baking mix
1 pound ground sausage, browned in a skillet
1 cup cheddar cheese, shredded
4 eggs, beaten
Directions:
Combine all the ingredients until they’re well mixed. In a muffin pan, fill each baking cup half full after greasing. Bake for 20 to 25 minutes at 350 degrees.
Mini Pigs in a Blanket
You’ll be out the door in no time with this simple recipe. These bite-sized pigs in a blanket are great for eating in the car, and they’re so delicious, you’ll have to have three or four. After popping them in the microwave, they’ll taste oven fresh, even after being stored for a while.
Ingredients:
1 package Hillshire Farm Cheddar Lit’l Smokies
1 can crescent rolls
Directions:
Preheat the oven to 375 degrees. Open the can of crescent rolls and slice each triangle lengthwise into two triangles. Place the sausage on the shortest side of the triangle, wrap in the dough and place point side down on a foil-covered baking sheet. Bake 12 to 15 minutes or until golden brown.
Mini Pancakes
Preparing this breakfast snack is fun because it’s completely customizable. Use any pancake mix, whether it’s regular, whole wheat or even something fun like pumpkin or gingerbread. They can be baked plain or you can mix in ingredients like chocolate chips, fruit, syrup, meat or anything you come up with. It’s time to be creative!
Directions:
Preheat the oven to 350 degrees. Whip up your preferred pancake mix, grease a muffin tin and fill the batter into one-third of each baking cup, adding in any toppings you want to use. Bake for 10 to 12 minutes.
